Selamat Hari Raya Aidilfitri! The festival of Hari Raya Aidilfitri has finally arrived. It’s the time to celebrate, not only the end of fasting, but the gift of family. [1] Everyone prays for a closer knit familial bond, and it is only right to celebrate through a feast with the family. If love is at the heart of every family, mothers are the sheer embodiment of it, the paragons of selflessness that keep our families together. The month of May is also the time to honour our mothers, the pillars of strength and kindness in our lives. This Hari Raya Aidilfitri, let us celebrate all of our blessings, our families, and the mothers who love and support us no matter what!

 

 

 

Hari Raya Aidilfitri’s Best

 

Mums are usually the ones who prepare our meals for us especially on special occasions like Hari Raya Aidilfitri, and what better way to show our appreciation by making her something heartfelt for a special day? Today we’ll be helping you make a special holiday feast that mum can be proud of.

 

Soto Ayam [2]

Soto Ayam is a fresh yellow chicken soup often paired with nasi impit or compressed noodles. The dish is light and tasty, making it a perfect post-fast meal!

Main Ingredients

  • half chicken, skinned
  • 1L water
  • 2 kaffir lime leaves
  • 2 bay leaves
  • 1 cm galangal/turmeric
  • 1 stalk lemongrass
  • 1 tsp Borges Extra Light Olive oil
  • 1 spring onion, minced

Spices

  • 5 shallots
  • 4 cloves garlic
  • 2 candlenuts, toasted
  • 1 cm cut turmeric
  • 1 cm cut ginger
  • 1/2 tsp ground pepper
  • 1 tsp salt

Others

  • 1 tomato, sliced
  • 50g vermicelli noodles, cooked
  • 100g cabbage, thinly sliced
  • 100g bean sprouts, boiled
  • 1 lime, sliced
  • fried onion
  • sambal on the side

 

  1. Mix the spices in a blender and set aside.
  2. Heat Borges Extra Light Olive Oil in a pan and stir fry the spices until fragrant.
  3. Add the lemongrass, bay leaves, kaffir lime leaves, and galangal. Saute for about 2 minutes.
  4. Add the water and chicken, letting it simmer for about 30 minutes over medium heat.
  5. Once done, take and shred the chicken into small pieces. Set aside.
  6. Go back to the broth and add the spring onions. Let simmer for five minutes before turning off the heat.

For the assembly, take an empty bowl. Put the noodles first, followed by the bean sprouts, cabbage, chicken, tomato slices and lime slices. Then, pour the soup broth over it and top off by sprinkling fried onion. If you want an extra kick, serve with sambal for some extra heat!

 

Nasi Impit [3]

Nasi Impit is basically rice that is compressed in a pan and served in square pieces for convenient consumption. It goes well with a lot of meals and is typically served with chicken satay and other skewered dishes. It is also the best partner for soto ayam, balancing out the tastiness of the chicken with the lightness of the rice! This dish is a sure hit with the family, and an even more fun meal to make with mum!

Ingredients

 

  1. Wash and cook rice as usual but only until the water recedes.
  2. Take a square baking pan and grease it with Borges Classic Olive Oil.
  3. Cook the rice and transfer onto the baking pan, press down hard including all 4 corners.
  4. Set aside and store at the bottom part of the refrigerator for at least 2 hours to let it cool.
  5. When ready to serve, take it out of the refrigerator and slice into small squares. Serve with the soto ayam and enjoy!

Plant-based milks make for a healthier evaporated milk substitute to give it a subtly sweet flavour that works best with rose syrup! Milky Sirap Bandung [4]

Ingredients:

Follow these easy steps:

  1. Put the rose syrup in a glass.
  2. Add the Borges Walnut Milk; if it is too milky for your taste, we recommend adding one part water to slightly dilute it.
  3. Add the ice, stir, and enjoy!
