Enjoy the Summer with some Borges BBQ!

Who says city folk can’t have a refreshing cookout? Urban parks, rooftop terraces, and even balcony spaces provide the perfect backdrop for some fun summertime grilling! It’s a chance to escape the daily grind and indulge in a joyful culinary adventure right where you live. With the city skyline behind you and the smoking grill in front of you, you can experiment with diverse cuisines or stick to flavours closer to home – anything is possible!

But aside from the delight of watching lovingly prepared and marinated foods sizzle on the grill, the environment itself becomes a social hub, where stories are shared, laughter echoes, and everyone pitches in to create a communal feast. And what better way to share in this camaraderie with family and friends than with Borges-made grill specials?

 

Grilled Zucchini [1]  

Serves: 8

Grilled vegetables, especially zucchini, are a vital part of any grill party due to their versatility, flavor, and health benefits. Zucchini's mild taste and firm texture make it an ideal candidate for grilling, where it takes on a delicious smoky char and becomes tender and flavorful.

INGREDIENTS:

 

INSTRUCTIONS

  • Lop off the tops and bottoms of the zucchini and quarter them lengthwise. Place in a very large resealable plastic bag (or two regular-size bags). Drizzle in the olive oil, then add 1 teaspoon salt,1 teaspoon pepper, 1 tablespoon lemon zest and the lemon juice. Seal the bag and smoosh everything around a bit so that the zucchini is coated. Set aside for 15 to 20 minutes to marinate.
  • Preheat a grill to medium. Grill the zucchini, turning, until nice and tender, being careful not to burn it, 12 to 15 minutes. Remove the zucchini to a plate as it gets done.
  • Pile up the rest of the lemon zest on a cutting board and sprinkle 1 tablespoon salt on top. Use a knife to chop the salt and zest together until it becomes lemon salt. Add more salt if it needs it. Sprinkle the lemon salt over the grilled zucchini.

 

Summer Italian Marinade for Chicken [2]

Chicken cooks relatively quickly and evenly on the grill, providing a lean, protein-rich option that balances out richer foods. Additionally, it pairs well with a range of side dishes, from salads to grilled vegetables. Its widespread popularity ensures that it caters to both meat lovers and health-conscious guests, making it a crowd-pleaser and a practical addition to any grill party.

INGREDIENTS

  • 1 ¾ cups white cooking wine
  • ½ cup lemon juice
  • 1 tablespoon Borges Classic Olive Oil
  • 1 tablespoon minced onion
  • 2 teaspoons minced garlic
  • 1 teaspoon whole black peppercorns
  • 1 tablespoon crushed black peppercorns
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon dried thyme
  • 1 tablespoon kosher salt

 

INSTRUCTIONS

  • Whisk the wine, lemon juice, Borges Classic Olive Oil, onion, garlic, whole peppercorns, crushed peppercorns, oregano, basil, thyme and salt together in a large bowl. Use mixture to marinate meat 2 to 24 hours before cooking.

 

Grilled Pork Chops [3]

Serves 4

Grilling pork chops is a straightforward process that doesn’t require complicated preparation, making it ideal for a casual summer gathering. They cook relatively quickly, which means less time spent at the grill and more time enjoying the party!

INGREDIENTS

  • ¼ cups
  • 2 tbsp Borges Classic Olive Oil
  • 1 tbsp apple cider vinegar
  • 1 tsp ground cumin
  • ½ tsp red pepper flakes
  • Eight ½ inch bone-in pork chops (about 3 ounces each)
  • Salt and freshly grounded black pepper

INSTRUCTIONS

  • Begin by making the marinade. In a small bowl, whisk together the honey, oil, vinegar, cumin and red pepper flakes.
  • Sprinkle both sides of the pork chops with salt and pepper and place in a re-sealable plastic bag with the marinade. Let rest on the counter for 1 hour. That's easy.
  • Heat a grill or grill pan over medium heat. Remove the pork chops from the bag and lightly sprinkle with salt and pepper. Place on the grill and cook until the pork chop releases from the grill, about 4 minutes. Flip and cook on the other side for another 3 minutes. If using a grill pan, be sure to do in batches so you don't steam the chops. And don't worry if you have neither; you can do this in a pan. See, easy!

 

Grilled Shrimp with Chili Cocktail Sauce [4]

Serves  4

Grilling enhances the natural sweetness of seafood, such as shrimp, fish, and scallops, imparting a delicious smoky char. Its light and delicate nature offers a refreshing contrast to heartier meats and sides, appealing to diverse tastes.

INGREDIENTS

  • About ¾ cups chili sauce
  • 2 tbsp prepared horseradish
  • 2 tbsp lemon juice, about ½ lemon
  • 1 tbsp hot sauce, as needed
  • 2 tsp Worcestershire sauce
  • 1 tsp celery seed, 1/3 palmful
  • 1 rib celery from heart with leafy tops, finely chopped
  • Coarsely ground black pepper
  • 16 jumbo shrimp, peeled and deveined
  • 2 tbsp Borges Extra Virgin Olive Oil
  • Salt
  • 1 tsp smoked sweet paprika
  • A small handful parsley, finely chopped

INSTRUCTIONS

  • Combine the first 7 ingredients in a bowl, and season with pepper, to taste. Refrigerate until ready to use.
  • Heat a grill pan or grill to medium-high.
  • Dress the shrimp with Borges Extra Virgin Olive Oil, salt and pepper, to taste, and smoked paprika. Skewer the shrimp onto metal skewers, to ease in turning them, and grill until the shrimp are opaque and firm, about 7 to 8 minutes. Pile the shrimp on a serving platter, and drizzle with the sauce or pass the sauce at the table.
